With summer potlucks and picnics coming up, it’s the perfect time for a simple appetizer. My grandpa use to make these salsa rollups, and they couldn’t be any easier to make!
Salsa, about 1 cup
8 oz cream cheese
Flour Tortillas (I used 7 of them)
Add softened cream cheese and about a cup salsa to a bowl. I never measure this, just go for taste and you’ll know. Feel free to use your favorite salsa brand and hotness. My grandpa would make some super hot ones and regular ones. Then he’d let you figure out which ones were which!
Beat this together with a hand mixer until its well blended. Then spread onto the tortillas. A thin layer is best, or you’ll lose most of it when you roll it up.
After they are rolled up, I place them in the refrigerator for a short time to get them a little firm before I slice them.
I like to slice them 1 1/2 – 2 inches wide so you get a good taste with each one, but it really doesn’t matter. Then, pop them back into the fridge until you’re ready to go. These usually don’t last too long so I’ve never had to worry about left overs, but since they have cream cheese keep proper storage in mind if you’re serving these outdoors in the heat this summer.
